Vegetarian Chicken Wraps with Quorn BBQ Chicken Sandwich Filler

This vegetarian chicken wrap recipe is perfect for lunch or a light dinner. Quorn Chicken Pieces are used to make this delicious, homemade BBQ sandwich filling, which is layered into soft tortillas with a Mardi Gras slaw. For a quick & easy lunch that’s ready in minutes with zero fuss, this really is the tastiest combination you’ll eat this week!

Simply prep the slaw, load your wrap and serve with lots of fresh zingy lime and coriander leaves for the ultimate lunch or light dinner.

Ingredients

  • For the Quorn BBQ ‘Chicken’:
  • 150g Frozen Quorn Pieces
  • 1 tbsp. BBQ sauce
  • 1 tbsp. reduced fat mayonnaise
  • 1 tbsp. lime juice
  • For the Mardi Gras Slaw:

  • 1 yellow pepper, sliced into strips
  • 1/8 red cabbage, shredded
  • 1 small carrot, sliced into thin matchsticks
  • A handful of coriander leaves, chopped
  • 1 lime, juice only
  • 1 tbsp low fat mayonnaise
  • ½ tsp. smoked garlic
  • ½ tsp. smoked paprika
  • To serve:

  • 4 mini tortilla wraps
  • Lime wedges
  • Coriander leaves

Method

For the Quorn BBQ ‘Chicken’:

  1. Pre-heat the oven to 180°C (fan)/200°C electric/Gas Mark 6.
  2. Line a baking tray with baking paper, place the frozen Quorn Pieces into the baking tray and cook in a pre-heated oven for 10 minutes. Remove and allow to cool.
  3. Place the BBQ sauce, mayonnaise and lime juice into a bowl and mix well. Add the cooked Quorn Pieces and mix lightly to coat. Set to one side.

For the Mardi Gras Slaw:

  1. Place all of the slaw ingredients into a bowl and mix to combine. Set aside.

To serve:

  1. Pre heat a griddle pan over a high heat. Griddle the wraps on one side for 2 minutes.
  2. To serve, divide the Mardi Gras slaw between the wraps. Top with a dollop of the prepared Quorn BBQ ‘chicken’ filling and garnish with lime wedges and coriander leaves.

Chefs tip

This filling works deliciously well as a jacket potato topper for a quick mid-week meal.
